Taste of Spring w/ GrowingGreat

Join me next Saturday evening at GrowingGreats' Taste of Spring fundraiser. A sunset celebration with local chefs, farmers and you.

GrowingGreat educates over 16,000 students and their families annually inspiring them to adopt healthy eating habits through school gardens and nutrition education. 


WITHOUT our HEALTH, what do we have? We hope that you will support their efforts by joining GrowingGreat and I for this deliciously wonderful event. Help them plant the seeds for healthier communities across our nation, as they expand their programs this Fall. 

Our health is something to celebrate, as are those of you who make it possible.

Honey Dijon Dressing

This week I dressed my quinoa and salads with a quick, simple & deeelicous homemade dressing.


Need:
olive oil
dijon mustard
honey (sage flavor)
lemon
sea salt

Make it:
(single serving- BUT make it your own & add more or less of each ingredient to spark your taste) 
1. Mix together a spoonful of dijon mustard and 2 tablespoons of extra virgin olive oil.
2. Cut off the tip of the lemon, squeeze & mix in.
3. Melt a spoonful of honey then mix in (I microwaved it for 35 seconds).
4. Two pinches of sea salt, mix for 20 seconds then enjoy.



I drizzled it on a salad with: kale, beets, spinach, red lettuce, quinoa, avocado & toasted sunflower seeds

Skinny Mode: The Quinoa Diet

A week before a shoot I go into skinny mode: two work outs a day paired with the quinoa diet. I rotate my workouts between yoga, circuit training, running & 200 crunches before bed. I’ll start my morning with a protein smoothie, snack during the day then make a veggie and quinoa medley for dinner (always before 7:30pm). 

Quinoa is exceptionally high in protein, amino acids, iron, fiber & magnesium (key for everything from mood support to electrolyte balance). Being fiber-rich it fills you up and gives you slow-burn energy (meaning you feel full longer, thus reducing your appetite). Finally, quinoa’s high protein helps you burn fat and calories. The quinoa diet works every time!

Daily go-to healthy snacks: gluten free granola with blueberries & almond milk, apples & almond butter, celery & hummus, avocado toast, quinoa, KIND bar or smoothie.
