During my 40 hour bullet trip to the Angels spring training in AZ, I met the team & staff, got 4 one-on-one interviews, shot a behind the scenes segment of photo day & did a promo video and photo shoot for Angels Weekly. I'd say it was a pretty successful visit.

Trevor Bell has high hopes to join the Angels on opening day.

During the off season Howie Kendrick is a full time dad, and his 3 year old son just picked up baseball.

If Torii Hunter's shoes get dirty during a game he will clean them between innings. "If you look good, you feel good. If you feel good, you play good."

Learning to Grow & Let Go

Change has been a fear of mine since I was little kid. However, this year it's been my mission to face my fears, let go & learn to grow. Change is inevitable in this life, but how you approach change will build your character and help you grow.

This morning my mom handed me the Friday March 2nd Daily Word with a smile on her face, and this is what it said...

"If we were never challenged to adjust to new conditions and new people, we would not grow. It is growth that gives life zest and meaning.

When I am confronted with change, I stop and look back over my life. I see every change has brought me new knowledge. Every change has given me confidence and new perspective.

I have no reason to be hesitant or fearful about my current situation. So I approach change with my mind and heart open to receive the new knowledge, the new confidence and the new vision it will bring.

Free of resistance, I welcome change as an opportunity for growth and development, and my life is enriched."

Today I start my out with the old, and in with the new attitude.

As I embark on this new life adventure, I will be welcoming change with an open heart and mind.

Coconut Veggie Quinoa

After my Skinny Mode post, I had several requests for my favorite quinoa recipe. Seeing as I eat quinoa daily & with everything, I'm sharing my most versatile recipe- coconut veggie quinoa. I usually make enough for 2 helpings- one for dinner, and the rest for tomorrow. You can toss the leftovers in a scramble, salad, or just re-heat and enjoy :)

Need:

1 cup quinoa

chicken broth (or veggie broth)

coconut oil

squash

zucchini

broccoli

spinach

eggplant

salt

pot with lid

sauce pan with lid

Do it:

1. cook 1 cup of quinoa in 2 cups of chicken broth. Bring to a boil, then cook on low for 17 minutes (with lid on)

2. chop veggies, then saute eggplant, zucchini & squash in a spoon full of coconut oil on medium/low. After 7 minutes add the spinach and lid.

3. broil broccoli (I usually broil until the edges turn light green, but still dark in middle), strain, then set aside.

4. once all is cooked, mix the veggies and quinoa in the sauce pan and stir it up. I usually season with 2 pinches of sea salt.

If you're a sauce lover, you're in luck because this recipe tastes delicious with ANY sauce you pair it with.

Quinoa is exceptionally high in protein, amino acids, iron, fiber & magnesium (key for everything from mood support to electrolyte balance). Being fiber-rich it fills you up and gives you slow-burn energy (meaning you feel full longer, thus reducing your appetite). Finally, quinoa’s high protein helps you burn fat and calories. The quinoa diet works every time!

Meet Lose Control- a newly formed hard rock band from Hermosa Beach, California. The band was put together by longtime friends Jeff Nisen and A.J. Bartholomew (who both play in popular bands in the South Bay). Lose Control showcases their incredible mind-blowing guitar playing, with each of their unique styles playing a crucial role in defining the overall sound. Reminiscent of bands such as Black Sabbath and Guns N' Roses, Lose Control is guaranteed to rock your world.

Last week I had the pleasure of styling their shoot...For Jeff we channeled Chris Cornell, and for A.J. we showed off those beautiful tattoos.

Sunday Funday- Ship Wreck

Yesterday's Sunday fun-day, turned into a full day adventure hiking along Palos Verdes coast line to the 1961 ship wreck.

We started our hike at the cove, and walked along the coast to the wreck. If you decide to embark on this adventure, I recommend bringing water, snacks, study shoes & taking the drain pipe short cut. This will turn your 3 hour rock hop into a fun 45 minute stroll.

There's not much of the ship left, but the few rustic pieces made the adventure totally worth it.

We opted for the shortcut back, walking along the cliffs trail.

Skinny Mode: The Quinoa Diet

A week before a shoot I go into skinny mode: two work outs a day paired with the quinoa diet. I rotate my workouts between yoga, circuit training, running & 200 crunches before bed. I’ll start my morning with a protein smoothie, snack during the day then make a veggie and quinoa medley for dinner (always before 7:30pm).

Quinoa is exceptionally high in protein, amino acids, iron, fiber & magnesium (key for everything from mood support to electrolyte balance). Being fiber-rich it fills you up and gives you slow-burn energy (meaning you feel full longer, thus reducing your appetite). Finally, quinoa’s high protein helps you burn fat and calories. Today I took my own advise and tried something new. For the past 3 years I've been talking about wanting to stand up paddle board, and today I finally did it :)

The major plus: I got to rock this throwback 70's Body Glove wetsuit.

I felt like Pocahontas floating down the river bend--just around the river bend. I sang Disney songs, laughed and screamed as seals were popping up all around my board.

Loved it, TRY IT.

Food Obsession: Vegan Kreme Cheeze

Leaf's raw and vegan kreme cheeze is the first non-dairy food item that actually taste like the real thing. Being a former cheese connoisseur, I was heart broken when I came to the realization that dairy and I did not work well together. BUT now, I can enjoy one of my favorite childhood spreads belly ache FREE :) and when my meat and dairy loving boyfriend can't stop eating it, you know it's good.

Spread it on toast, a bagel or add an extra flavor to a sandwich. Here I have it on Glutinos gluten free table crackers (found at Whole Foods) paired with a little avocado- natural brain food.

It has the perfect fluff and consistency, identical to whipped cream cheese.

You can find Leaf's raw/vegan onion & chive kreme cheeze at Whole Foods (in the raw refrigerator) or enjoy it at their cafe Leaf Organics in Culver City with corn chips & kale krisps for $6.50

I love to LOVE. The way I see it, everyday is Valentines day, and since Jeff and I couldn't decided weather to go out or make food, we did both!

We had a double LOVE DAY celebration. Monday night we hit HOT's Kitchen and Tuesday we made a play list, cooked chicken/eggplant parmesan and danced the night away to classic rock love songs.

Fashion has always been such a great way to express personal style, so I'm sharing mine with you by introducing a new segment to my blog: All Dolled Up with Vanessa Perilman.

It's always fun when my designer pal Vanessa Perilman comes over to style me. Im having a bit of an obsession these days over brooke shields amazing locks in the BLUE LAGOON. Channeling her from the movie we twisted my hair in a soft braid, and gave it a more rugged look by mixing it with a leopard high/low printed dress, a rocker chic leather jacket and some cute suede booties from Jeffrey Campbell. I love how innocent the hair looks with the cooler pieces like the leather jacket...and of course, the outfit wouldn't be complete without the CHANEL!

Thursday night my sister Megan and I were guests at Will.i.am's I.am.Angel Grammy fundraiser at the Hollywood Palladium. The dance floor was turned into a high end VIP lounge filled with white couches, Wolf Gang Puck appetizers and champaign.

Favorite part of the evening- STEVIE WONDER's performance!!!

Dancing front row covered in chills- an experience I will remember forever.

The other performances: Taboo of the Black Eyed Peas, Coco Lee, K'naan, Ne-Yo and Alicia Keys.

Friday night: legendary African Jazz musician Hugh Masekela at UCLA.

Saturday: Another music legend was lost, when Whitney Houston was found dead in her Beverly Hilton hotel room.

Tonight was by far the coolest yoga class I've ever taken in my life. Julie Rader taught the 6pm yogi's to a live drum show. It created an energy in the room that flowed magically with every move...and the last 7 minutes of class everyone folded their mats and danced around the room. It was a full free spirit/ Coachella dance moment.

Every January The Green Yogi does a 30 day yoga challenge where one must complete 20 yoga classes in 30 days. Today was the last day of the challenge and the live drum class was a celebratory treat!

The Green Yogi is an eco-friendly boutique studio that offers daily vinyasa flow classes.

During our prep days leading up to the games, everyone takes "run breaks"...and since our office is conveniently located at the bottom of Buttermilk mountain and steps away from the chair lift, taking a 3 run break is a daily routine.

After 2 full days at LAX, I finally made it to Aspen on Sunday...and the wait was totally worth it!

While most passengers were pissed our flight was cancelled on Saturday (it was illegal to take off from LAX due to weather conditions in Aspen), I was extremely grateful I did not have to experience the scary/bumpy flight...Sunday's flight was as smooth as a baby's bottom :)

SAD Breaking News: Freestyle Skier Sarah Burke Dies at 29

A talented soul was lost today with the death of Sarah Burke. The 29 year old Canadian skier was injured January 10th while training in Park City, Utah when she crashed at the bottom of the infamous superpipe...The same half pipe that snowboarder Kevin Pearce suffered a traumatic brain injury while training back in 2009.

This 4 time Winter X Games Champion suffered "a torn vertebral artery, which led to severe bleeding on the brain causing her to go into cardiac arrest on the scene," according to a statement released by her publicist Nicole Wool, on behalf of the family. Wool also states that Burke's organs and tissues were donated per her wishes.

"Burke was the best-known athlete in her sport and will be remembered for the legacy she left for women in freestyle skiing."

Next week's Winter X Games in Aspen will not be the same without you...

My Beside Dream Book

The dream book has been a staple in my family for years. As a child when I would awake from a scary or confusing dream, I would jump from my bed, sprint down the hallway, and wake my mom with my confusing & scattered stories. We would immediately write down the significant symbols, situations, colors, shapes etc…only to find the deeper meaning and lesson I could take away from my dream. “The purpose of it all, is to know yourself and to see all the lessons as positive opportunities to learn and grow”

Our dreams are a learning tool & “a vehicle for relieving insights and information which is usually beyond the reach of the conscious mind.” When we are in a state of unconsciousness we are able to connect with our higher being.

Before leaving the house, I took my own advise from the "holiday survival guide" blog, and pre-gamed with some grilled chicken (I was uncontrollably starving and probably would have over loaded on apps). The pre-game totally worked! Once I arrived my belly was satisfied, and I nibbled on some shrimp and peppers to hold me over till dinner.

After 6 years of blowing off jury duty, I finally gave in and was summoned to downtown LA. The first 5 years I was either in school or studying abroad, but after my last failure to appear (because I was working in China) I got the "you will be fined" notice if you don't respond or reschedule.

For once in my life I was over an hour early- trying to beat the traffic...and it bit me in the booty because I had to camp out on the street until the doors opened at 7am. And let me tell ya, this is not a safe place for a girl to be out on the streets in the dark.

So here I am in my 8th hour of sitting at the criminal justice court, and I must say it's not as bad as I expected. With free internet, finding a friend- Kevin Glass and a 90 minute lunch break, I actually had a fun adventure getting lost downtown for lunch...

Holiday Survival Guide

With holiday parties in full force and new years just around the corner, the last thing we want to do is pack on those extra love pounds. So here are a couple tips to help keep the holiday weight off while still having a blast.

At the party- be selective. The food and drinks will be endless, but with a little pre-plan there is a way to enjoy your night without blowing your "stay in shape during the holiday's" diet.

Pre-party with a protein-rich mini meal. If you show up hungry, chances are you WILL over eat, or go straight for the booze and drinking on an empty stomach is a fast track to a hangover.

pre-food suggestions: grilled chicken salad, quinoa & veggie hash, sashimi, piece of toast with almond butter or clear soup.

Be picky with your apps. "Go for the worthwhile indulgence, not the cheap waste of calories."-InStyle magazine

vitamin boosters: red peppers- low calories & packed with essential nutrients
appetite suppressant: shrimp- the lean protein helps turn off your body's hunger mechanism.
portion controller: broccoli- is filled with fiber & fills you up so you eat less.
booze buster: caprese salad- fat in mozzarella slows the absorption of the alcohol into the bloodstream
hydrator: red grapes- helps with dehydration & loaded with antioxidants.

Fill your plate wisely. Instead of polishing off a full plate, take small samples of everything at the buffet...and once again be selective. If you get the pasta salad, pair it the veggies and hummus.
Space out your drinks. If you're going to be drinking all night, mix in a water or sparkling water every 2 drinks.

Get your lazy butt out & get active. Lounging around the house just prolongs the pain, opt for the quick fix and sweat it out. "Physical activity floods cells with oxygen and releases mood-boosting neurotransmitters," (Heather Hausenblas- exercise psychologist). This will not only help you feel better, but work off some of those extra drinks.
EAT Breakfast. There is a reason your body craves greasy fatty foods after a long night of drinking...your body needs to be replenished, but do it wisely.

EAT lightly buttered toast (I use earth balance butter and Udi's gluten free toast), veggie scramble or whole-grain pancakes. DRINK orange juice to replenish depleted vitamins.

Most importantly- HAVE FUN & DON'T STRESS IT

Hawaii - Part 1

In the spirit of our spontaneous mindset, Jeff and I booked a Hawaiian adventure a week before our departure! Our calendars opened up and stars must have alined because everything went as smooth as a baby seal.

Before this trip, I had only ventured to Hawaii resort style; once to the big island for my grandparents anniversary and the other to Maui with the fam. This trip we camped out on Sunset Beach with the most loving and crazy family on the north shore- the Orian's. They welcomed us with open arms, immediately making us a part of their family. There is a huge difference between going resort style VS. staying with the locals, and after this trip, I'm sticking to the locals.

Arriving 2 days before the most anticipated surf contest of the year, PIPE MASTERS, our 8 day adventure began.

You, Only Better: How to own the body you have (and keep it running for a long time)

Anybody who watches a music video or opens a fitness magazine notices the obvious: fit and lean is what’s supposed to turn heads. Six-packs, tight guns, and flawless skin is hot, hot, hot. But chances are good you’re not about to audition as a back-up dancer for Nicki Minaj. It might even be possible you’re not quite at the top of your game. And it can be way too easy to see how far there is to go and just give up.

Easy for someone else. Not for you. You’re gonna learn to love the body you have.

People tend to find their flaws then focus their energy on those “flaws” instead of finding their strengths. As a result they get in the habit of taking their bodies for granted and not taking care of themselves the way they should.

So how can we flip this around? First, start a list of all your personal strengths. Go crazy. Don’t be modest! If you’re fly on the dance floor, if you’re a whiz on the computer, if you’re a baller on the court, put that on your list. Feel good about how far you’ve come in your life. You earned it!

Creating your own personal list keeps you on track and helps you connect with your body. It takes a conscious effort to make it happen, but acknowledgment is the first step to success.

Maybe you’re thinking, “How do I love my body if I’m not happy with it?” The answer is simple: you gotta give yourself a little credit for what your body can do well. Then get started on this 7-step process to help you connect with your body and keep it running for a long time.

1. Focus on the good: What do you love about yourself? Maybe you have great shoulders, or shapely calves, or a chest that puts 50 Cent to shame. Whatever you’ve got that you love, start with that. Look for exercises that show off what you can do well. Once you get the confidence of seeing what you do well, you’ll be motivated to start working on he rest of your body.

2. Step off the scale: Don’t focus on your weight. Focus on how you feel. The numbers on a scale should be an indicator that you’re headed in the right direction, but they shouldn’t be the goal. If you feel healthy, you’re probably on the right path.

3. Don’t compare your body: Once you start comparing yourself to other people, you’re on a path to total destruction. It’s too easy to find someone with a tighter chest, bigger guns, or a flatter stomach. But you’re not those people, so get over it. You’re you. This is your body, the only one you will every have. Accept it and take care of it. Own it.

4. Find what works for you: Everybody is different and needs different things from diet, exercise to clothing. If doing yoga makes you feel like a clown, skip it. Try something that makes you feel good instead, like kickboxing, running, or crossfit. Do things that work for your body and wear things that flatter your body. (Ladies, that means all y’all trying to fit into t-shirts two sizes too small? It’s time to go shopping.) All these things will help strengthen your body, mind, and soul.

5. Diet: Diet is not a four-letter word! A diet doesn’t mean you only get to eat cardboard or you’ll never get to drink pop again. Think of a diet as fuel for your body; you are what you eat, and what you eat will determine your mood, health, and energy level. Out of your three daily meals, breakfast is the most important. It gives your body energy, gets your metabolism flowing and feeds your brain. Feed yourself smart.

Pay attention to what you’re eating and how it makes your body feel. When you finish a meal do you feel awake and energized or tired and sick? Food determines your energy level, and not every food works with everyone. Every person’s body is different, meaning every person’s diet will be different as well.

6. Exercise: This is the big daddy right here. Exercise is the number one health supporter. Doing some sort of physical activity daily, it doesn’t matter what it is, will improve your heart, mind, energy levels, mood, and your physical appearance (which is always a plus!)

7. Do things that make you smile: Whether it’s listening to music, dancing, reading your favorite book or magazine, walking outside, going on an adventure…anything that puts a smile on your face, do it daily! Happy people are healthy people.

Check Yourself Out

When it's time for your annual check-ups, who do you see...the family doc, dentist, optometrist, gynecologist...Well, you might want to add 2 more docs to your list...

Maybe you were sunburned as a kid or ware tanning oil instead of sunscreen, and these days you expect your doctor to catch any "unusual" skin marks...not the case. According to the American Society for Dermatologic Surgery, more then 90% of dermatologist have seen at least 5 patients in the last year with skin cancer who were overlooked or mis-diagnosed by their non-dermatologist doctor.

Growing up a sun-kissed kid, I've had yearly skin checks since I was 10...and thank goodness. If you're not going to see a dermatologist, you should regularly check your body for moles, new freckles or unusual lumps. FEEL YOURSELF, CHECK YOURSELF OUT. Especially since melanoma is the most common cancer among women 25-29, and skin cancer is the cancer most frequently diagnosed in women.

Today I added a new doc to my list...chiropractor Dr. Bates. I've had chiropractic work done in the past, but nothing consistent. If I had a bad fall in soccer or sever back pain, I'd go in for a crack. Yesterday I had my back x-rayed and today the photos screamed the truth...

The spine on the right is a "normal" spine, and the spine on the left is mine- phase 1 degeneration: a loss or change in the normal curve of the spine. This could have been caused by numerous things: soccer, heading the ball, pour posture, leaning over a desk, typing for long hours, texting...The important part is, I'm taking care of it now, so my back can feel as young as I am.

Take it for what it is, but at least take these docs into consideration.

Friday: Thanksgiving dessert for BREAKFAST...We were getting in shape to watch the Victoria Secret fashion show on Tuesday.

After stuffing our faces with dessert, it was straight to the beach to show off our full bellies and watch the Thankshoisting Ace Tournament. Once night rolled in at 5pm (not chill) we cupid shuffled to Ocean Bar to watch Jeff play acoustic for a couple hours 'till the house music took over.

When it comes to food, the Curry's go big. Which is why there was no surprise that our final head count at Thanks-curry-giving was 54 beautiful souls. It took an entire week to prepare our gluten free & vegan friendly meal, 30 emails confirming everyone's dishes, 8 tables & 54 hungry people.

A Why Not Weekend

Our weekend was a spur of the moment, why not weekend. Everything we did was decided an hour before it happened, and I loved it.

It all started at 6:10pm Thursday night when Jeff and I got invited to Hammitt's holiday trunk sale at 12th & Highland. I rushed home from yoga (that got out at 6) and we walked into the party at 7:15 (that is oober record time for this lady).

After a glass of wine, a beautiful brandy colored Avalon Croc bag and a couple photos we were swooped from the party at 8pm by Tony G and off to The Music Box in Hollywood to see Dawes & Blitzen Trapper...I had never heard of either band, so I went in with no expectations (the best way to see a show). I was blown aways by their 3-4 part harmonies, everyone in the band played at least 2 instruments and they both had the most beautiful 70's rock sound. Besides every song sounding like the last, I'd give them both a B+

While at the show we got invited to Big Bear for the weekend, and without hesitation we were in. Friday morning we slowly woke up, got our snowboard gear together and headed up the mountain. Once we made it to the cabin, we played Apples to Apples for 5 hours, made a delicious stir-fry and fell asleep to Return of the Jedi on VHS...what a classic.

Saturday- we slept in and arrived at Snow Summit around noon 30. Now, I did not go boarding once last season, and these were probably the sketchiest/ scariest conditions I've ever experienced. With every carve you could hear your board shaving the ice and prayed your edge wouldn't catch, leaving you face first in the snow. Luckily, we all made it out safe. And for a $30 half day lift ticket, it was totally worth it to get out in the snow again.

The Holiday's Hit the Beach

Last week was the official mark of the holiday season with Manhattan Beach's annual open house and pier lighting. I love living in this town for nights like this. The streets were blocked off and filled with locals walking around to each store for drinks and appetizers, while carolers sang in the streets and the pier was lit.

Before heading downtown for the celebration, we met at Lidia's for some food and homemade sangria. Thank goodness Lidia made sangria because the one downfall of this year's open house was that none of the stores were serving cocktails like years past...just juice and coffee.

Homemade Sinus Rinse-DIY

After doing my first homemade sinus rinse, I had Shelby Stillians and my mom Peggalicious walk us through what it takes to keep sickness away...a quick DIY sinus rinses!!

Lemon pumpkin Seeds

My favorite topping of the moment is lemon pumpkin seeds. Super fast and easy to make, and a great extra flavor on the table for the holidays.

Needs:
raw shelled pumpkin seeds
extra virgin olive oil
1 lemon
lemon peper
salt
cookie sheet
parchment paper

Steps:
1. pre-heat the oven to 450
2. lay the parchment paper on the cookie sheet. Evenly spread the pumpkin seeds on the parchment paper and drizzle the olive oil over the seeds. (I put the seeds in a zip lock bag, then drizzle the olive oil in the bag, and mix them around so it gets on every seed).
3. squeeze half a lemon over the seeds on the parchment paper, then sprinkle as much salt and lemon pepper as desired. I've also drizzled a little raspberry vinaigrette over the seeds, along with the lemon for a sweet & zesty flavor.
4. cook for 5-6 minutes or until half of the seeds tan (half will be green and half will be light brown), but be careful they will turn dark brown very fast.
5. let cool for another 5 minutes

Enjoy them on:

Salads, fish, chicken, stir-fry, veggies or solo.

The Ultimate Veterans Day

Today is a day to remember and honor those who have given their lives to serve our country, our proud US military veterans. This federal holiday is celebrated on the 11th amongst other holidays around the world like Armistice Day & Remembrance Day, which mark the anniversary of the singing of the Armistice that put an end to World War I.

BUT the reason this Veterans Day 11.11.11 is so symbolic is because "the major hostilities of WWI were formally ended at the 11th hour, of the 11th day of the 11th month in 1918 when the Germans singed the Armistice".

Be happy and grateful today that we are blessed to have an amazingly strong military that allows us to live our lives in peace and harmony.

From the bottom of my heart, thank you VETERANS.

This site for all the betches out there, if you are having a bad day or in need of an extra laugh, get to this site ASAP. The betch speak the hilarious blunt truth that every betch has done, is thinking or wishes to experience. At first this site may seem a bit harsh, but if you stick with it you'll see that a betch is just a women who has good self confidence, a developed personality and stays in shape.

Tis the season for the sick bug

As the weather changes, so does our health, and no matter how hard we try to stay healthy, once the winds roll in- so do the runny noises, coughs and flues. I know majority of America rushes to the pharmacy to get their annul vaccinations, but I'm here to tell you there are healthy ways to prevent the sick bug, with out being injected with god knows what.

* First and for most- Ladies, dress for the weather. When out at night, make sure to always bring a coat or scarf to keep your body warm.

* Drink a ton of water- at least 5 glasses a day. If you split it up and have 1 glass before breakfast, 2 during your work day, 1 before dinner & 1 before bed, you'll be drinking up to 8 glasses in no time. And you wanna know the best thing about drinking a ton of water...it makes your skin look fabulous, and reduces those food cravings (best diet trick in the book).

* Daily vitamins and minerals. I take and recommend a fish oils, vitamin C (Emergen-C) and a pro-biotic every day. You can find these at Whole Foods or Trader Joe's.

*Do not got to bed or outside with wet hair.

* Sick tea (our families favorite)- boil the 4 ingredients in a large pot for 20 minutes, then let it settle for another 10 before drinking.

-2 lemons cut in 1/4th
-2 sticks of lemon grass
-1 stick of cinnamon
-ginger
Add as much honey as desired

* Exercise at least 3 times a week. Weather it be a walk, run, yoga, hike or fitness class, try something new and exciting- exercise is a great way to kick the sick bug (and make you look fantastic).

Now if you've already come down with the bug, here are a couple things that will help
Stay away from dairy products, they only create more mucus.

-First sign of cold or cough- Echinacea & Yin Chaio

-First sign of flu like symptoms- Oscillococcinum (which can now be found at almost any grocery story)

-Sick with cold or cough- Zong Gan Ling & Echinacea

But most importantly do things that make you happy. FACT- When you are happy you are less likely to get sick.

Eggplant delight

Eggplant is my favorite summer veggie, and since they are only in season from July-October, I'm finding anyway to incorporate them into every meal. This weeks favorite...individual eggplant parmesans.

Ingredients

1 eggplant

olive oil

gluten free bread crumbs

parmesan cheese

italian seasoning

marinara sauce

veganise

Cooking steps
Set oven to broil
1. thinly slice one whole eggplant
2. grill the eggplant on a sauce pan (I grill it with ghee)
3. spread thin layer of veganise on both sides of the grilled eggplant
4. mix the gluten free bread crumbs, parmesan cheese & italian season in a bowl
5. lay each side of the eggplant in the bread crumb mix

6. grill both sides of the eggplant once again in the sauce pan

7. lay the eggplant on a cookie sheet, and cover the top with marinara sauce and parmesan cheese

8. broil for 3-4 minutes

then enjoy anyway you like

here I have it on toast, mixed with grilled zucchini, chopped or eaten just the way it is.

Mark your calendars sport fans because there are just 5 days left until The World University Games air on Fox College Sports!

I like to think of the World University Games (aka WUG) as the college Olympics, because they are neck and neck with the Olympics in terms of scale, audience attendance and level of competition. I mean these student athletes have to endure the same training, the same sacrifices and the same determination to be the best in the world- all while maintaing good grades in their trek to a college degree. If that's not skill, I don't know what is.

Now besides the obvious reasons you should be watching The World University Games, here are a couple more to sway your remote to FOX College Sports network Monday November 7th @ 4:30pm

- Over 10,000 athletes from a 150 different countries will be participating in these games

- Nearly 300 US athletes will proudly compete in 17 different events

Halloweenie traditions

As a kid Halloween was the best because it was the only day of the year my mom gave us a "free pass" on candy. Growing up in an all organic household meant we could only get a non-organice piece of candy if we snuck it, so Halloween was our candy gold. Unfortunately, I would get all worked up the night of Halloween and would only be able to stomach a couple pieces before getting sick. Back then I was convinced it was the organic curse. Today, it's my blessing in disguise.

Now a days when halloween comes around, it's all about the parties, but I like to continue a couple young traditions...

Great story behind this chicken suit...my friend let me borrow it for our walk home because I was freezing, and as soon as I zipped it up, I chicken danced the whole way home. Apparently I forgot to zip up my purse when I was dancing home in the suit, because I got a call from a woman at 8am the next morning saying she found my wallet on the sidewalk of PCH...now that's some great karma.
